  • 2 cups crushed sugar cookies
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1/2 cup sour cream
  • 2 tsp pure vanilla extract
  • 3 large eggs, at room temperature
  • Whipped cream (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C). Crush the sugar cookies into fine crumbs and mix with melted butter. Press this mixture into the bottom of a springform pan.
  2. Bake the crust for about 10 minutes until slightly golden. Allow it to cool.
  3. In a mixing bowl, beat cream cheese and granulated sugar until smooth. Add sour cream and vanilla extract; mix until combined.
  4. Add eggs one at a time, gently mixing after each addition.
  5. Pour the cheesecake filling over the cooled crust and bake for 45-50 minutes until set but still slightly jiggly in the center. Let cool in the oven with the door slightly ajar for about an hour.
  6. Refrigerate for at least four hours before serving. Top with whipped cream just before slicing.
