  • 4 cups whole milk (or almond milk)
  • 1/2 cup granulated sugar (or honey)
  • 1/4 tsp saffron threads
  • Zest of 1 large orange
  • 1 tsp pure vanilla extract
  • 1/4 cup chopped pistachios or almonds (for garnish)

Instructions

  1. Rinse Arborio rice under cold water until the water runs clear.
  2. In a small bowl, soak saffron threads in 2 tablespoons of warm milk.
  3. In a medium saucepan, combine rinsed rice, remaining milk, sugar, and orange zest over medium heat. Stir until simmering.
  4. Once rice is tender (about 20 minutes), stir in the saffron mixture and vanilla extract; cook for an additional 5 minutes.
  5. Allow to cool slightly before serving warm or chill in the fridge for at least two hours. Garnish with chopped nuts before serving.
