  • 1 lb lean ground beef
  • 1 medium onion, finely chopped
  • 1 medium carrot, shredded
  • 4 cloves garlic, minced
  • 28 oz canned whole peeled tomatoes
  • 2 tbsp extra virgin olive oil
  • 1 tsp dried oregano
  • 1 cup dry red wine
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by finely chopping the onion, garlic, and carrot.
  2. In a large skillet over medium heat, heat the olive oil and sauté onions until translucent (about 5 minutes). Add garlic and carrots; cook for an additional 2 minutes.
  3. Add ground beef, breaking it apart as it browns (approximately 8 minutes). Drain excess fat if necessary.
  4. Stir in the canned tomatoes (crushing them gently), oregano, salt, and pepper. Pour in the red wine and simmer for about 10 minutes.
  5. Cook rigatoni according to package instructions until al dente. Drain and combine with the sauce before serving.
