  • 2 ½ cups cake flour
  • 1 cup granulated sugar
  • 1 cup buttermilk
  • 3 large eggs
  • 1 cup vegetable oil
  • 2 tbsp unsweetened cocoa powder
  • 1 oz red food coloring
  • 1 tsp vanilla extract
  • 8 oz cream cheese (full-fat)
  • 4 cups powdered sugar
  • 1 cup crushed Oreo cookies

Instructions

  1. 1. Preheat oven to 350°F (175°C). Grease two round cake pans or line them with parchment paper.
  2. 2. In a bowl, whisk together cake flour, cocoa powder, baking soda, and salt.
  3. 3. In another bowl, beat sugar and vegetable oil until fluffy. Add eggs one at a time, mixing well; then stir in red food coloring and vanilla extract.
  4. 4. Alternate adding buttermilk and dry ingredients to the wet mixture until just combined.
  5. 5. Divide batter between prepared pans and bake for 25-30 minutes or until a toothpick comes out clean. Cool in pans for 10 minutes before transferring to wire racks.
  6. 6. For the frosting, beat cream cheese until smooth, then gradually add powdered sugar and crushed Oreos until well combined.
  7. 7. Once cakes are cool, layer with frosting between cakes and on top. Decorate with additional crushed Oreos if desired.
