  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 3 large eggs
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp vanilla extract
  • 1 cup fresh raspberries
  • 8 oz cream cheese, softened
  • 1/4 cup sour cream
  • 1 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan.
  2. In a bowl, whisk together melted butter, granulated sugar, and brown sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  3. Sift in cocoa powder and flour; mix until just combined. Gently fold in half of the fresh raspberries.
  4. In another bowl, beat softened cream cheese until smooth. Add sour cream and powdered sugar; mix until creamy.
  5. Spread half of the brownie batter into the prepared pan. Pour the cheesecake mixture over it, then drop spoonfuls of the remaining brownie batter on top and swirl with a knife.
  6. Bake for 30–35 minutes or until set but slightly gooey in the center. Let cool before slicing.
