  • 4 boneless pork chops (about 1 inch thick)
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 8 oz fresh mushrooms (cremini or button), sliced
  • 1 cup heavy cream
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • ½ cup chicken broth
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste
  • 2 tbsp olive oil (for frying)
  • 2 tbsp butter (for frying)

Instructions

  1. Pound the pork chops between plastic wrap until about ¼ inch thick.
  2. Season the flour with salt and pepper; dredge each chop in flour and shake off excess.
  3. Dip floured chops into beaten eggs, then roll in breadcrumbs until well-coated.
  4. In a skillet over medium heat, melt olive oil and butter. Cook schnitzels for about 3–4 minutes on each side until golden brown.
  5. Remove schnitzels; in the same skillet, sauté mushrooms until browned. Add onions and garlic; cook until soft.
  6. Stir in heavy cream and chicken broth; simmer for about 5 minutes until slightly thickened. Season with additional salt and pepper.
  7. Serve schnitzels topped with creamy mushroom sauce and garnish with parsley.
