- 4 boneless pork chops (about 1 inch thick)
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup panko breadcrumbs
- 8 oz fresh mushrooms (cremini or button), sliced
- 1 cup heavy cream
- 1 medium onion, chopped
- 3 cloves garlic, minced
- ½ cup chicken broth
- 2 tbsp fresh parsley, chopped
- Salt and pepper to taste
- 2 tbsp olive oil (for frying)
- 2 tbsp butter (for frying)
Instructions
- Pound the pork chops between plastic wrap until about ¼ inch thick.
- Season the flour with salt and pepper; dredge each chop in flour and shake off excess.
- Dip floured chops into beaten eggs, then roll in breadcrumbs until well-coated.
- In a skillet over medium heat, melt olive oil and butter. Cook schnitzels for about 3–4 minutes on each side until golden brown.
- Remove schnitzels; in the same skillet, sauté mushrooms until browned. Add onions and garlic; cook until soft.
- Stir in heavy cream and chicken broth; simmer for about 5 minutes until slightly thickened. Season with additional salt and pepper.
- Serve schnitzels topped with creamy mushroom sauce and garnish with parsley.
