  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar (packed)
  • 2 large eggs (room temperature)
  • 1/3 cup unsweetened cocoa powder
  • 1/4 cup all-purpose flour
  • 1 tsp espresso powder
  • 8 oz mascarpone cheese
  • 1/4 cup powdered sugar
  • Cocoa powder (for dusting)

Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8×8-inch baking pan.
  2. In a bowl, mix melted butter, granulated sugar, and brown sugar until creamy.
  3. Beat in eggs one at a time. Sift together cocoa powder, flour, espresso powder, and salt; fold into the mixture gently.
  4. Pour batter into the prepared pan and bake for 25-30 minutes or until a toothpick comes out with moist crumbs.
  5. While baking, whisk mascarpone cheese with powdered sugar until smooth; add vanilla or coffee liqueur if desired.
  6. Once brownies are slightly cooled, spread mascarpone mixture on top and dust with cocoa powder before cutting.
