  • 8 oz fettuccine or tagliatelle
  • 2 cups mixed fresh mushrooms (cremini and shiitake), sliced
  • 1/4 cup fresh sage leaves
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 medium onion, finely chopped
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted boiling water until al dente according to package instructions. Drain and reserve a little pasta water.
  2. In a large skillet over medium heat, warm olive oil and sauté the chopped onion and minced garlic until translucent.
  3. Add sliced mushrooms and cook until browned and tender, about 5-7 minutes.
  4. Stir in the heavy cream and bring to a simmer. Add Parmesan cheese, stirring until melted.
  5. Toss in fresh sage leaves, then add the drained pasta to the skillet. Mix well, adding reserved pasta water if needed to reach desired consistency.
  6. Serve immediately with extra Parmesan on top.
