- 1 cup strong brewed espresso
- 2 tbsp amaretto liqueur
- 24 ladyfinger cookies (about 200g)
- 1 cup mascarpone cheese (240g)
- ½ cup granulated sugar (100g)
- 1 cup fresh cherries, pitted and halved (150g)
- Cocoa powder for dusting
Instructions
- Brew espresso and let it cool; stir in amaretto.
- Wash and pit cherries; set aside some whole for garnish.
- In a bowl, mix mascarpone and sugar until smooth; fold in half of the cherry halves.
- Dip ladyfingers quickly in the espresso mixture and layer them in a dish.
- Spread half of the mascarpone mixture over the ladyfingers, add another layer of dipped ladyfingers, and top with remaining mascarpone.
- Chill for at least 4 hours before serving; dust with cocoa powder and garnish with whole cherries.
