- 4 boneless, skinless chicken breasts (680g)
- 3 tbsp extra virgin olive oil (45ml)
- Juice of 1 fresh lemon
- 4 garlic cloves, minced
- 2 tsp dried oregano
- 4 oz feta cheese, crumbled (113g)
- 1 cup cherry tomatoes, halved (150g)
- Fresh parsley for garnish
Instructions
- Gather all ingredients. Halve cherry tomatoes and mince the garlic.
- In a bowl, mix olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Add chicken breasts and marinate for at least 30 minutes.
- Heat a skillet over medium-high heat. Add olive oil and sear marinated chicken until golden brown on both sides (about 5-7 minutes per side).
- Add cherry tomatoes around the chicken and sprinkle feta cheese on top. Reduce heat to medium-low and cover; cook until chicken reaches an internal temperature of 165°F (75°C), roughly another 10 minutes.
- Remove from heat, let rest briefly, garnish with fresh parsley, and serve.
