High Protein Mediterranean Chicken is a vibrant, flavor-packed dish featuring tender chicken marinated in aromatic herbs, perfect for healthy meals and effortless meal prep.


Ingredients

  • 4 boneless, skinless chicken breasts (680g)
  • 3 tbsp extra virgin olive oil (45ml)
  • Juice of 1 fresh lemon
  • 4 garlic cloves, minced
  • 2 tsp dried oregano
  • 4 oz feta cheese, crumbled (113g)
  • 1 cup cherry tomatoes, halved (150g)
  • Fresh parsley for garnish

Instructions

  1. Gather all ingredients. Halve cherry tomatoes and mince the garlic.
  2. In a bowl, mix olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Add chicken breasts and marinate for at least 30 minutes.
  3. Heat a skillet over medium-high heat. Add olive oil and sear marinated chicken until golden brown on both sides (about 5-7 minutes per side).
  4. Add cherry tomatoes around the chicken and sprinkle feta cheese on top. Reduce heat to medium-low and cover; cook until chicken reaches an internal temperature of 165°F (75°C), roughly another 10 minutes.
  5. Remove from heat, let rest briefly, garnish with fresh parsley, and serve.
