  • 2 medium carrots, diced

  • 1 can (15 oz) diced tomatoes

  • 1 tsp fresh thyme
  • 1 bay leaf
  • Salt and pepper, to taste
  • 2 tbsp olive oil

Instructions

  1. Prep all vegetables by washing and chopping them.
  2. In a large pot over medium heat, add olive oil and sauté onions, carrots, and celery until softened (about 5 minutes).
  3. Stir in minced garlic, thyme, and bay leaf; sauté for another minute until fragrant.
  4. Add diced tomatoes and vegetable broth; bring to a gentle boil.
  5. Stir in pearl barley along with salt and pepper; lower heat to simmer for 30 minutes until barley is tender.
  6. Remove bay leaf, adjust seasoning if needed, then serve warm.
