  • 2 stalks celery, diced

  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes in juice
  • 4 cups low-sodium vegetable broth
  • 2 cups fresh spinach or kale
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions, carrots, and celery; sauté for about 5 minutes until softened.
  2. Stir in garlic, cumin, and smoked paprika; cook for an additional minute until fragrant.
  3. Add lentils, canned tomatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer for 25-30 minutes until lentils are tender.
  4. Stir in spinach or kale during the last few minutes of cooking; season with salt and pepper to taste.
