  • 2 lbs beef chuck roast, cubed
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 15 oz can tomato sauce
  • 2 cups elbow macaroni
  • 3 cups low-sodium beef broth
  • 2 tsp smoked paprika
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Set Instant Pot to sauté mode. Heat oil and add onions and garlic; cook until golden.
  2. Add cubed beef chuck roast; sear on all sides until browned.
  3. Stir in bell peppers, tomato sauce, beef broth, paprika, Italian seasoning, salt, and pepper.
  4. Gently fold in uncooked macaroni ensuring it’s submerged.
  5. Close lid securely; set to high pressure for 10 minutes.
  6. Release pressure carefully; open lid and garnish with parsley if desired before serving.
