Ingredients

  • 6 large eggs
  • 1/2 cup whole milk (or milk alternative)
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup diced vegetables (bell peppers or spinach)
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Prepare your ingredients by chopping vegetables.
  2. In a bowl, whisk together eggs and milk until frothy.
  3. Stir in cheese, vegetables, salt, and pepper.
  4. Lightly grease silicone molds and pour in the egg mixture until three-quarters full.
  5. Place molds on a trivet inside an Instant Pot with water below. Cook on high pressure for 10 minutes.
  6. Allow natural release of pressure before removing molds. Let cool slightly before serving.
