- 1 lb ground turkey breast
- 1 cup black beans (mashed)
- 2 tbsp chipotle peppers in adobo sauce (chopped)
- 1/4 cup fresh cilantro (chopped)
- 1/2 cup whole wheat breadcrumbs
- 1 large egg
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 1 avocado (sliced) for topping
- 1/2 cup pico de gallo for topping
Instructions
- In a large bowl, combine ground turkey, mashed black beans, chipotle peppers, cilantro, breadcrumbs, egg, cumin, chili powder, salt, and pepper. Mix until just combined.
- Divide the mixture into six equal portions and shape into patties about one inch thick.
- Preheat your grill or grill pan over medium-high heat. Lightly oil the grates or pan to prevent sticking.
- Grill patties for about six minutes on each side or until they reach an internal temperature of 165°F (74°C).
- Remove from heat and top with sliced avocado and pico de gallo. Serve on toasted buns or lettuce wraps.
