Ingredients

  • 1 lb medium-sized organic carrots
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp salt
  • 1/4 tsp fresh ground pepper
  • 1 cup whole milk ricotta cheese
  • Zest of 1 lemon

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Wash and peel the carrots; slice them lengthwise or leave whole if slender. Toss in olive oil, salt, and pepper.
  3. Spread carrots on a parchment-lined baking sheet. Roast for 25-30 minutes until tender and caramelized.
  4. In a bowl, mix ricotta cheese with lemon zest and salt until light and fluffy.
  5. Once roasted, transfer carrots to a serving platter and dollop whipped ricotta over the top.
