  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup bell peppers, chopped (mix of red, yellow, green)
  • 1 cup cherry tomatoes, halved
  • 1 cup corn (frozen or canned)
  • 2 cups vegetable broth
  • 2 tbsp lime juice
  • 1 tsp cumin
  • 1 tsp chili powder
  • 2 tbsp olive oil

Instructions

  1. Rinse the quinoa under cold water to remove bitterness.
  2. In a large skillet, heat olive oil over medium heat. Add chopped bell peppers and cherry tomatoes; sauté for about 5 minutes until softened.
  3. Stir in cumin and chili powder to coat the vegetables.
  4. Add rinsed quinoa, black beans, corn, and vegetable broth; stir well.
  5. Bring to a boil over high heat, then reduce to low heat and cover. Simmer for about 15 minutes or until quinoa absorbs the broth.
  6. Remove from heat and squeeze fresh lime juice over the dish before serving.
