  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 2 tablespoons jerk seasoning
  • Juice of 2 limes
  • 2 ripe mangoes, diced
  • 1 medium red onion, finely chopped
  • 1 cup bell peppers (red or yellow), diced
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the chicken breasts with jerk seasoning, minced garlic, and lime juice. Marinate for at least 30 minutes.
  2. Preheat your grill to medium-high heat and lightly oil the grates.
  3. Grill the marinated chicken for about 6-7 minutes per side until cooked through (juices run clear).
  4. While the chicken grills, prepare the mango salsa by mixing diced mangoes, red onion, bell peppers, cilantro, and salt in a bowl.
