  • 1/4 cup fresh parsley, chopped
  • 3 garlic cloves, minced
  • 1/2 cup panko breadcrumbs
  • 1 cup full-fat Greek yogurt
  • 1 medium cucumber, grated
  • 2 tbsp fresh lemon juice
  • 1 cup cherry tomatoes, halved
  • 1 cup bell peppers, sliced
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, combine ground meat, parsley, garlic, breadcrumbs, salt, and pepper. Mix gently.
  3. Shape the mixture into golf-sized meatballs and place on a parchment-lined baking sheet.
  4. Bake meatballs for about 20 minutes until golden brown and cooked through.
  5. In another bowl, mix Greek yogurt with grated cucumber, lemon juice, minced garlic, salt, and pepper to create tzatziki.
  6. Cook rice according to package instructions.
  7. Assemble bowls with rice as the base topped with meatballs, fresh veggies, and tzatziki sauce.
