This delightful bowl not only pleases the palate but also creates an impressive presentation, making it perfect for both casual weeknight dinners and festive gatherings.

Ingredients

Scale
  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup flat-leaf parsley, chopped
  • 1/2 cup fresh cilantro, chopped
  • 4 garlic cloves, minced (2 for marinade, 2 for garlic sauce)
  • 1/4 cup freshly squeezed lime juice
  • 1/2 cup high-quality olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp red chili flakes (adjust to taste)
  • 1 cup sour cream

Instructions

  1. 1. Marinate the Chicken: In a bowl, mix minced garlic, parsley, cilantro, lime juice, olive oil, red wine vinegar, and red chili flakes. Place chicken in a resealable bag or dish and pour half of the chimichurri over it. Marinate for at least an hour (or overnight).
  2. 2. Prepare Your Grill: Preheat grill to medium-high heat (about 400°F).
  3. 3. Grill the Chicken: Remove chicken from marinade (discard leftover marinade) and grill for 6-8 minutes per side until reaching an internal temperature of 165°F.
  4. 4. Make Your Garlic Sauce: While grilling, mix sour cream with minced garlic until smooth. Season with salt and pepper to taste.
  5. 5. Assemble Your Bowls: Slice grilled chicken into strips. In bowls or plates, layer rice or quinoa as a base followed by sliced chicken and assorted veggies.
  6. 6. Drizzle and Serve: Generously drizzle garlic sauce over the bowls and finish with reserved chimichurri.
