- 3 cloves fresh garlic, minced
- 2 tbsp Cajun seasoning
- 1 medium red bell pepper, diced
- 1 medium zucchini, sliced
- 4 cups low-sodium chicken broth
- 1 cup orzo pasta
- 2 tbsp olive oil
- Fresh parsley (optional), chopped for garnish
Instructions
- Heat olive oil in a large pot over medium-high heat. Season chicken breasts with Cajun seasoning and sear until golden brown (about 5 minutes per side). Remove chicken from pot.
- In the same pot, add diced red bell pepper and zucchini. Sauté for about 3 minutes until slightly softened.
- Stir in minced garlic and cook for an additional minute until fragrant.
- Add orzo pasta and pour in chicken broth, scraping any browned bits from the bottom of the pot. Bring to a gentle boil.
- Return the chicken to the pot, cover with a lid, and reduce heat to low. Simmer for about 15 minutes until orzo is tender.
- Remove from heat and garnish with chopped parsley if desired. Serve hot.
