  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1/2 cup balsamic vinegar
  • 2 tbsp honey
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 8 oz fresh mozzarella cheese, sliced
  • Fresh basil for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Spray a baking dish with nonstick cooking spray.
  3. In a small bowl, whisk together balsamic vinegar, honey, minced garlic, and Italian seasoning. Pour the mixture over the chicken in the baking dish and marinate for at least 30 minutes.
  4. Bake the marinated chicken for 25-30 minutes until it reaches an internal temperature of 165°F (75°C).
  5. In the last five minutes of baking, sprinkle fresh mozzarella cheese on top and return to the oven until melted and bubbly.
  6. Serve garnished with fresh basil and drizzle with leftover balsamic sauce.
