Ingredients

  • 1 cup all-purpose flour
  • 2 tbsp granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground cinnamon
  • 2 large eggs
  • 1 cup eggnog
  • 1/4 cup milk (or alternative)
  • 2 tbsp melted butter
  • 1 tsp vanilla extract

Instructions

  1. In a large bowl, whisk together flour, sugar, baking powder, nutmeg, and cinnamon until well combined.
  2. In another bowl, beat eggs and add eggnog, milk, melted butter, and vanilla extract; whisk until smooth.
  3. Slowly pour the wet ingredients into the dry mix, stirring gently to combine—lumps are fine!
  4. Preheat a non-stick skillet over medium heat. Test readiness by splashing water on it; if it sizzles, you’re good to go!
  5. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes or until bubbles form on top before flipping.
  6. Once golden brown on both sides, serve warm topped with syrup or whipped cream.
