- In another bowl, beat eggs and add eggnog, milk, melted butter, and vanilla extract; whisk until smooth.
- Slowly pour the wet ingredients into the dry mix, stirring gently to combine—lumps are fine!
- Preheat a non-stick skillet over medium heat. Test readiness by splashing water on it; if it sizzles, you’re good to go!
- Pour about 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes or until bubbles form on top before flipping.
