  • 1 lb gnocchi (fresh or frozen)
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 medium zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • ½ cup Parmesan cheese, grated

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Chop the bell peppers, zucchini, and cherry tomatoes into bite-sized pieces.
