  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup long-grain rice (white or brown)
  • 2 cups low-sodium chicken broth
  • 1 cup plain full-fat Greek yogurt
  • 1 small cucumber, grated
  • 2 tsp fresh dill weed (or 1 tsp dried)
  • 2 tbsp freshly squeezed lemon juice
  • 2 garlic cloves, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lightly coat a baking dish with nonstick cooking spray.
  3. In a bowl, combine rice and chicken broth. Mix well and pour into the prepared baking dish.
  4. Place the chicken breasts on top of the rice mixture. Season with salt, pepper, minced garlic, and drizzle with olive oil.
  5. Cover the dish tightly with foil and bake for 30 minutes.
  6. While baking, prepare tzatziki by whisking together Greek yogurt, grated cucumber, lemon juice, dill weed, salt, and pepper in a separate bowl. Refrigerate until ready to serve.
  7. After baking, fluff the rice with a fork and serve topped with tzatziki sauce.
