- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup long-grain rice (white or brown)
- 2 cups low-sodium chicken broth
- 1 cup plain full-fat Greek yogurt
- 1 small cucumber, grated
- 2 tsp fresh dill weed (or 1 tsp dried)
- 2 tbsp freshly squeezed lemon juice
- 2 garlic cloves, minced
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Lightly coat a baking dish with nonstick cooking spray.
- In a bowl, combine rice and chicken broth. Mix well and pour into the prepared baking dish.
- Place the chicken breasts on top of the rice mixture. Season with salt, pepper, minced garlic, and drizzle with olive oil.
- Cover the dish tightly with foil and bake for 30 minutes.
- While baking, prepare tzatziki by whisking together Greek yogurt, grated cucumber, lemon juice, dill weed, salt, and pepper in a separate bowl. Refrigerate until ready to serve.
- After baking, fluff the rice with a fork and serve topped with tzatziki sauce.
