Ingredients

  • 1 lb boneless chicken thighs
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cups tomatoes (fresh or canned)
  • 2 tbsp unsweetened cocoa powder
  • 2 tbsp mole spice mix (cumin, chili powder, cinnamon)
  • 1 cup low-sodium chicken broth
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients: Wash and chop the onion and garlic.
  2. Sauté onions in vegetable oil over medium heat until translucent (about 5 minutes). Add garlic and sauté until fragrant.
  3. Add chopped tomatoes; cook until they break down into a chunky sauce (around 8 minutes).
  4. Nestle in the chicken thighs and pour in the chicken broth to cover by half an inch.
