Ingredients

  • 10 cloves fresh garlic
  • 4 cups low-sodium vegetable broth
  • 2 medium potatoes, diced
  • 1 large onion, chopped
  • 2 cups crusty bread cubes for croutons
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic; sauté until fragrant, about 5 minutes.
  2. Stir in the diced potatoes and pour in the vegetable broth. Bring to a boil.
  3. Reduce heat and let simmer for 20 minutes until potatoes are tender.
  4. Blend the soup using an immersion blender until smooth (or blend in batches). Adjust seasoning with salt, pepper, and a splash of lemon juice if desired.
  5. Toast bread cubes in the oven at 350°F (175°C) until golden brown for croutons.
  6. Serve hot with croutons sprinkled on top and garnish with fresh parsley.
