  • 34 lbs bone-in lamb shoulder
  • 4 dried guajillo peppers
  • 2 dried pasilla peppers
  • 5 garlic cloves
  • 1 large onion, sliced
  • 2 ripe tomatoes
  • 1 cinnamon stick
  • 2 bay leaves
  • 4 cups beef broth
  • Fresh cilantro for garnish

Instructions

  1. Toast guajillo and pasilla peppers in a dry skillet until fragrant; remove stems and seeds.
  2. Blend toasted peppers with garlic, onions, tomatoes, and enough beef broth to create a smooth sauce.
  3. In a large pot or Dutch oven, sear the lamb shoulder on all sides until browned.
  4. Pour the blended sauce over the lamb, add remaining beef broth, cinnamon stick, and bay leaves; stir well.
  5. Cover and simmer on low heat for at least three hours or until lamb is fork-tender.
