Ingredients

  • 2 cups fresh green peas (or frozen)
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1/4 cup fresh mint leaves
  • 2 tbsp lemon juice
  • 1/2 cup heavy cream (optional)
  • Salt and pepper to taste

Instructions

  1. In a pot, heat 2 tbsp olive oil over medium heat. Sauté the diced onion and minced garlic until translucent (about 5 minutes).
  2. Add the peas and vegetable broth. Bring to a simmer for about 10 minutes.
  3. Blend the mixture until smooth using an immersion blender or in batches with a regular blender.
  4. Stir in fresh mint leaves and lemon juice before serving. Optionally add cream for extra richness.
  5. Serve hot, garnished with mint leaves or a swirl of cream.
