- 2 tsp Italian seasoning
- 2 tbsp extra virgin olive oil

Instructions
- 1. Season chicken breasts with salt and pepper on both sides. In a large skillet, heat olive oil over medium heat. Cook chicken for 6-7 minutes per side until golden brown and internal temperature reaches 165°F (75°C). Remove from skillet.
- 2. In the same skillet, sauté minced garlic until fragrant (about 30 seconds).
- 3. Pour in heavy cream, stir in Parmesan cheese and Italian seasoning. Simmer for about 3-5 minutes until slightly thickened.
- 4. Add spinach and sun-dried tomatoes; cook for another 2-3 minutes until spinach wilts.
- 5. Return cooked chicken to the skillet, spoon sauce over each piece, and warm through for an additional minute.
- 6. Serve hot over pasta or rice, garnished with more Parmesan if desired.
