  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 2 cups fresh spinach
  • ½ cup sun-dried tomatoes packed in oil, chopped
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 tsp Italian seasoning
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. 1. Season chicken breasts with salt and pepper on both sides. In a large skillet, heat olive oil over medium heat. Cook chicken for 6-7 minutes per side until golden brown and internal temperature reaches 165°F (75°C). Remove from skillet.
  2. 2. In the same skillet, sauté minced garlic until fragrant (about 30 seconds).
  3. 3. Pour in heavy cream, stir in Parmesan cheese and Italian seasoning. Simmer for about 3-5 minutes until slightly thickened.
  4. 4. Add spinach and sun-dried tomatoes; cook for another 2-3 minutes until spinach wilts.
  5. 5. Return cooked chicken to the skillet, spoon sauce over each piece, and warm through for an additional minute.
