- 1 lb large shrimp, peeled and deveined
- 8 oz fettuccine pasta
- 1 cup fresh basil pesto (store-bought or homemade)
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 4 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a large pot over medium heat, add olive oil and shrimp. Cook until pink and opaque (3-4 minutes), then remove from pot.
- Add minced garlic and uncooked pasta to the same pot. Pour in enough water to cover pasta by about an inch.
- Bring to a boil; cook until pasta is tender (10-12 minutes).
- Reduce heat, stir in heavy cream and pesto until well combined.
- Return shrimp to the pot; mix in Parmesan cheese. Season with salt and pepper.
- Serve hot, topped with additional basil or cheese if desired.
