- 1 medium carrot (diced)
- 2 tbsp tomato paste
- 4 cups seafood stock (low-sodium)
- ½ cup dry white wine (Sauvignon Blanc)
- 2 bay leaves
- 1 tsp dried thyme
- 1 tsp smoked paprika
- Salt & pepper to taste
- Juice of half a lemon
Instructions
- Melt butter in a large pot over medium heat. Add onions, celery, and carrots; sauté for about 5 minutes until softened.
- Stir in garlic and tomato paste; cook for another 2 minutes until fragrant.
- Deglaze the pot with white wine, scraping up any bits from the bottom, and let simmer until reduced by half.
- Pour in seafood stock, add bay leaves and thyme, then bring to a gentle boil. Reduce heat and simmer for 20 minutes.
- Gently fold in crab meat and shrimp; cook for an additional 5 minutes.
- Stir in heavy cream and lemon juice just before serving. Adjust seasoning as needed.
