  • 34 boneless, skinless chicken breasts (1 lb)
  • 2 celery stalks, diced
  • 1 cup red grapes, halved
  • 1/2 cup Greek yogurt
  • 2 tbsp Dijon mustard
  • Salt and pepper, to taste
  • 4 whole wheat pita breads

Instructions

  1. Poach the chicken in boiling salted water for 15-20 minutes until tender. Allow it to cool.
  2. While cooling, dice the celery and halve the grapes.
  3. Shred the cooled chicken using forks or your hands.
  4. In a bowl, mix shredded chicken, celery, grapes, Greek yogurt, Dijon mustard, salt, and pepper until well combined.
  5. Cut each pita in half and fill generously with the chicken salad mixture.
  6. Serve immediately with extra grapes on the side.
