- 3–4 boneless, skinless chicken breasts (1 lb)
- 2 celery stalks, diced
- 1 cup red grapes, halved
- 1/2 cup Greek yogurt
- 2 tbsp Dijon mustard
- Salt and pepper, to taste
- 4 whole wheat pita breads
Instructions
- Poach the chicken in boiling salted water for 15-20 minutes until tender. Allow it to cool.
- While cooling, dice the celery and halve the grapes.
- Shred the cooled chicken using forks or your hands.
- In a bowl, mix shredded chicken, celery, grapes, Greek yogurt, Dijon mustard, salt, and pepper until well combined.
- Cut each pita in half and fill generously with the chicken salad mixture.
- Serve immediately with extra grapes on the side.
