  • 4 cups fresh romaine lettuce, chopped
  • 1 ripe avocado, sliced
  • ½ cup freshly grated parmesan cheese
  • ¼ cup light Caesar dressing
  • 1 cup croutons
  • Juice of 1 lemon
  • ½ tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat grill or stovetop pan to medium heat. Season chicken breasts with salt, pepper, and garlic powder. Cook for 7-8 minutes per side until golden brown and juices run clear.
  2. While the chicken cooks, chop romaine lettuce into bite-sized pieces and place in a large bowl.
  3. Once cooked, let chicken rest for a few minutes before slicing thinly along with the avocado.
  4. In the bowl of lettuce, add sliced chicken, avocado pieces, croutons, and parmesan cheese. Drizzle generously with Caesar dressing.
