  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 4 cups green cabbage, shredded
  • 1 cup carrots, grated
  • 2 tbsp sesame oil
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp honey
  • 2 tbsp rice vinegar
  • 1/4 cup chopped green onions
  • 1/4 cup creamy peanut butter

Instructions

  1. Heat a skillet over medium heat. Add sesame oil and cook seasoned chicken breasts for about 6 minutes per side until golden brown and cooked through. Allow to cool, then slice thinly.
  2. In a bowl, whisk together soy sauce, honey, rice vinegar, peanut butter, and remaining sesame oil until smooth. If needed, add warm water for desired consistency.
  3. Combine shredded cabbage, grated carrots, and chopped green onions in a large bowl.
  4. Toss in the sliced chicken and pour the dressing over the salad. Mix well to coat everything evenly.
