Description

Ingredients

  • 2 lbs flank steak
  • 1 cup red bell pepper, sliced
  • 1 cup green bell pepper, sliced
  • 1 large yellow onion, thinly sliced
  • 4 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes
  • 2 tsp ground cumin
  • 2 tsp dried oregano
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Prepare your ingredients by slicing the peppers and onions and mincing the garlic.
  2. In a large skillet over medium-high heat, add olive oil and sear the flank steak for about 4 minutes on each side until browned.
  3. Remove the steak and add the sliced onions and peppers to the same skillet. Sauté for about 5 minutes until softened.
  4. Add minced garlic, crushed tomatoes, cumin, oregano, salt, and pepper. Stir well.
  5. Return the flank steak to the skillet. Cover and let it simmer on low heat for about 2 hours or until tender.
  6. Shred the beef with two forks and mix it back into the sauce before serving over rice or in tortillas.
