Ingredients

  • 4 fresh bagels
  • 4 large eggs
  • 1 cup whole milk
  • 1 cup grated sharp cheddar cheese
  • 1 cup chopped vegetables (spinach, bell peppers, or onions)
  • Salt and pepper to taste
  • 2 tbsp fresh herbs (chives or parsley)
  • 1/2 cup cooked bacon or ham (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, whisk together eggs and milk until frothy. Stir in salt, pepper, cheese, vegetables, and herbs until combined.
  3. Slice each bagel in half horizontally and scoop out some of the center.
