Description

  • 4 ears fresh corn (or 3 cups canned corn)
  • 1 red bell pepper, diced
  • ½ medium red onion, finely chopped
  • ¼ cup fresh cilantro, chopped
  • Juice of 2 limes
  • 1 ripe avocado, diced
  • 1 tsp chili powder

Instructions

  1. 1. Shuck the corn and boil in water for 5-7 minutes until tender. Drain and cool before cutting off the kernels.
  2. 2. Dice the red bell pepper and soak the chopped red onion in cold water for about 10 minutes to reduce sharpness.
  3. 3. In a large mixing bowl, combine corn kernels, bell pepper, onion, cilantro, and chili powder. Mix until well combined.
  4. 4. Squeeze fresh lime juice over the mixture and gently fold in diced avocado.
  5. 5. Taste and adjust seasoning as needed before serving chilled or at room temperature.
