  • 2 cups fresh Brussels sprouts, finely chopped
  • 1 cup plain breadcrumbs
  • 1 large egg
  • ½ cup grated Parmesan cheese

  • 1 tsp Italian herbs (basil, oregano, thyme)
  • 2 cups tomato sauce
  • ½ tsp red pepper flakes (adjust to taste)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Finely chop the Brussels sprouts.
  3. In a large bowl, combine ground beef, chopped Brussels sprouts, breadcrumbs, egg, Parmesan cheese, garlic, and Italian herbs. Mix until well incorporated.
  4. Shape the mixture into meatballs about 2 inches in diameter and place them on the prepared baking sheet.
  5. Bake for 25-30 minutes until golden brown and cooked through.
