Description

Ground Beef Enchiladas are a family favorite, featuring savory ground beef wrapped in soft tortillas, topped with zesty sauce and gooey cheese. Perfect for any gathering!


Ingredients

  • 1 lb lean ground beef
  • 8 flour or corn tortillas
  • 2 cups shredded cheddar and Monterey Jack cheese
  • 2 cups enchilada sauce (homemade or store-bought)
  • 1 chopped onion
  • 2 minced garlic cloves
  • 1 tsp cumin
  • 1 tsp chili powder
  • Sour cream or Greek yogurt for serving

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, sauté the chopped onions in oil until translucent, then add minced garlic.
  3. Stir in the ground beef and season with cumin and chili powder; cook until browned.
  4. Spoon the beef mixture onto each tortilla, roll tightly, and place seam-side down in a baking dish.
  5. Pour enchilada sauce over the rolled tortillas and top with shredded cheese.
  6. Bake uncovered for about 20 minutes or until the cheese is melted and bubbly.
