Ingredients

  • 1 cup peeled and deveined shrimp (fresh or frozen)
  • 8 rice paper wrappers
  • 1 cup lettuce, shredded
  • 1 medium carrot, julienned
  • 1 medium cucumber, julienned
  • ¼ cup fresh mint leaves
  • ¼ cup fresh cilantro leaves
  • 2 tbsp hoisin sauce
  • 2 tbsp peanut butter

Instructions

  1. Prepare your workspace by cleaning the countertop and gathering all ingredients.
  2. In a shallow bowl, soak each rice paper wrapper in warm water for 10-15 seconds until softened.
  3. Lay the softened wrapper flat and layer with shrimp, lettuce, carrots, cucumber, mint, and cilantro.
  4. Fold the sides inwards and roll tightly from the filling edge to the end.
  5. In a small bowl, mix hoisin sauce and peanut butter until smooth; adjust consistency with water if necessary.
