- 3–4 boneless, skinless chicken breasts (about 1 pound)
- 2 cups fresh broccoli florets
- 1 cup quinoa
- 2 tbsp extra virgin olive oil
- 2 cloves fresh garlic, minced
- Juice of 1 lemon
- ¼ cup fresh herbs (parsley and basil), chopped
- 1 tbsp honey or maple syrup
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water. Boil in 2 cups of water, then simmer for about 15 minutes until fluffy.
- Heat olive oil in a skillet over medium-high heat. Add seasoned chicken breasts and cook for 6-7 minutes per side until golden brown.
- In the last 3 minutes of cooking, add broccoli florets to the skillet.
- For the dressing, whisk together garlic, herbs, lemon juice, honey, salt, and pepper in a small bowl.
- In a large bowl, combine cooked quinoa, sautéed chicken with broccoli, and drizzle with herb dressing. Toss to coat well.
