  • 2 cups apple cider
  • 1 large onion, sliced
  • 4 garlic cloves, minced

Instructions

  1. Pat the pork shoulder dry and season generously with salt and pepper.
  2. Heat olive oil in a Dutch oven over medium-high heat. Sear the pork on all sides until golden brown (about 3-4 minutes per side).
  3. Remove the pork and sauté onions and garlic until softened (about 3 minutes).
  4. Deglaze the pot with apple cider, scraping up browned bits from the bottom.
  5. Return the pork to the pot along with thyme and rosemary. Cover tightly.
  6. Simmer on low for about 3 hours or until fork-tender (or cook in an oven preheated to 300°F).
