  • 100g lardons (smoked bacon)
  • 150g all-purpose flour
  • 1 tsp baking powder
  • 3 large eggs
  • 100ml whole milk
  • Fresh thyme (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8-inch round cake pan.
  2. In a skillet, cook the lardons over medium heat until crispy (5-7 minutes). Drain on paper towels.
  3. In a mixing bowl, combine chunks of Camembert with warm milk and stir until smooth.
  4. In another bowl, sift together flour and baking powder.
  5. Beat the eggs into the melted cheese mixture one at a time. Gradually mix in the flour until just combined.
  6. Fold in crispy lardons and thyme if using.
  7. Pour the batter into the prepared pan and bake for 35-40 minutes or until golden brown and a toothpick comes out clean.
