- 2 cups hominy (canned or frozen)
- 1 cup fresh cilantro (for garnish)
- 1 cup green salsa (salsa verde)
- Juice of 2 limes
- 1 medium onion (chopped)
- 4 garlic cloves (minced)
- 4 cups low-sodium chicken broth
- 1 tsp cumin powder
- 1 tsp dried Mexican oregano
- Salt and pepper to taste
Instructions
- Chop the onion and mince the garlic; set aside.
- Heat olive oil in a skillet over medium heat. Sear chicken on both sides until golden brown, about 3-4 minutes per side.
- Transfer seared chicken to the crockpot along with onion, garlic, hominy, salsa verde, broth, cumin, oregano, salt, and pepper.
- Cover and cook on low for 6-8 hours until the chicken shreds easily with a fork.
- Shred the chicken in the pot using two forks; stir to combine.
- Serve hot, garnished with fresh cilantro and lime wedges.
