Ingredients

  • 4 medium russet potatoes
  • 2 tablespoons extra virgin olive oil
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup cooked bacon bits
  • 1/2 cup sour cream
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash potatoes thoroughly, poke holes with a fork, and bake for about 45 minutes until tender.
  3. Allow potatoes to cool slightly, then cut them in half lengthwise and scoop out the insides, leaving a thin layer.
  4. Brush both sides of the potato skins with olive oil and season with salt and pepper.
  5. Bake the skins upside down for 10-15 minutes until golden brown. Remove from oven, fill with cheese and bacon bits, and return to bake for another 5-7 minutes until the cheese melts.
  6. Serve drizzled with sour cream.
