  • 2 large Yukon Gold potatoes (about 1 pound), sliced into 1/4-inch rounds
  • 1 cup freshly grated Parmesan cheese
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Slice potatoes into thin rounds and place them in a bowl. Drizzle with olive oil, then sprinkle with salt, pepper, garlic powder, and half of the Parmesan cheese. Toss until evenly coated.
  3. Arrange potato rounds on the baking sheet in a single layer without overlapping.
  4. Bake for 25-30 minutes, flipping halfway through until golden brown and crispy.
  5. In the last 5 minutes of baking, sprinkle remaining Parmesan cheese on top.
  6. While baking, mix Greek yogurt with minced garlic, lemon juice, salt, and pepper for the garlic dip.
  7. Serve hot with garlic dip.
