  • 1 cup freshly grated Parmesan cheese
  • 1 cup panko breadcrumbs
  • 4 cloves fresh garlic, minced
  • 4 tbsp unsalted butter
  • 2 tbsp olive oil
  • 2 tbsp fresh parsley or basil, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Pat chicken breasts dry with paper towels for optimal crispiness.
  3. In one bowl, mix panko breadcrumbs, Parmesan cheese, salt, and pepper. In another bowl, whisk one egg until frothy.
  4. Dip each chicken breast into the egg mixture, then coat evenly in the breadcrumb mixture.
