  • 4 medium Russet potatoes (about 600g)
  • 3 cloves fresh garlic, minced
  • ½ cup grated Parmesan cheese (50g)
  • 2 large eggs
  • 1 cup panko breadcrumbs (100g)
  • 1 tsp salt
  • ½ tsp pepper
  • 2 tbsp extra virgin olive oil

Instructions

  1. Wash and peel the potatoes, then cut them into even chunks.
  2. Boil the potato chunks in salted water for 15-20 minutes until fork-tender; drain and cool slightly.
  3. Mash the potatoes until smooth, then mix in the minced garlic, Parmesan cheese, eggs, salt, and pepper until fully combined.
  4. Form the mixture into small balls or patties (about 1 inch in diameter).
  5. Roll each ball in panko breadcrumbs until coated.
  6. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper. Arrange the pops on the sheet and drizzle with olive oil.
