  • 2 fresh cod fillets (about 6 oz each)
  • 1 cup panko breadcrumbs
  • 2 medium Russet potatoes (about 12 oz), cut into wedges
  • 2 tsp olive oil
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions

  1. Wash and cut the potatoes into wedges. Soak in cold water for 30 minutes to remove excess starch.
  2. Preheat your air fryer to 400°F (200°C).
  3. Pat dry the cod fillets and season both sides with salt and pepper.
  4. In one bowl, beat an egg; in another, mix panko breadcrumbs with additional salt and pepper. Dip each fillet into the egg wash, then coat with breadcrumbs.
  5. Drain and pat dry the soaked potatoes, then toss them in olive oil until evenly coated.
